How do we know that there are red giant stars that are different from stars like our Sun? The answer to this rather simple question has the advantage that it can be used to show how observational data, physics-based models, statistical representations and simulations interact in astronomy. The distinction between red giants and main sequence stars is thus a nice toy model that can be used to look behind the scenes of astronomical research.
